A native of the region, Executive Chef Mathieu Klein is a graduate of the Lycée Hôtelier Alexandre Dumas in Illkirch. He owes his love of cooking to his older brother, seven years his senior.
In 2004, he began his career as a chef at La Maison des Têtes**** in Colmar, which enabled him to develop his technical skills. He then went on to take the ‘Basics of Cooking’ course at the Alain Ducasse school in Paris. Season after season in various fine establishments, he finally landed his first job as Head Chef in 2009 at Le Clos des Délices in Ottrott. A purist with exacting standards, it’s the precision on the plate and the single-product approach that attracts him.
For him, his cuisine is ‘simple, but not simplistic’.
